Barb’s breakfast casolette with fresh spinach, bacon and herbs from our garden



A full Breakfast is served between 7:30 and 8:30 unless other arrangements have been made. Fresh fruit and fresh baked goods are served with one of our signature breakfast items.

Outdoor patio seating available in warm weather.

Ransome Inn Breakfast Casserole

10 eggs 3 med. potatoes, precooked & sliced
1 cup of assorted cooked vegetables, i.e. peppers, onions, mushrooms
1/2 cup milk
1/2 cup Cheddar cheese
1/2 cup Parmesan cheese
1 cup cooked ground sausage, or cooked diced bacon or any other breakfast meat (optional)
Salt & pepper to taste
Any fresh or dry herbs to taste, i.e. parsley, oregano, basil. etc.

Preheat oven to 350 degree.  Take a 3 quart casserole dish and coat with Pam or butter.  Beat eggs, milk and seasonings.  Stir in vegetables, meat, and cheese, keep potatoes aside.  Layer the bottom of the casserole dish with potatoes and pour all remaining ingredients into dish.

Cook about one hour or until the casserole “puffs” up and is brown on top.  Cool or let rest before serving, slice portions like a pie.  Easily serves 4.

What is nice about this creation, is that you can substitute any kind of cheese, vegetables or meat that you want in or leave out.  It combines all your favorite things into one dish.  It can also be set-up the night before or even cooked and then just heated up for the mornings breakfast, either singular pieces in the microwave or in the oven as a whole.  Stores well and is a great way to use leftovers such as cooked potatoes or ham.
